Crisp Bok Choy Salad with Sesame Ginger Dressing

Inspired by the vibrant flavors of Chinese cuisine, this bok choy salad is a fresh and modern twist perfect for celebrating the spirit of renewal and health during Chinese New Year.

Ingredients

Dressing:

  • 1 inch ginger root, peeled and grated .
  • 2 cloves garlic, peeled and minced
  • 2 tbsp rice vinegar
  • 1 tbsp Chinese mustard (or Dijon mustard)
  • 1 tbsp lemon juice
  • 1 tsp soy sauce
  • 1/4 cup sesame oil
  • Pinch of red pepper flakes (optional)

Salad:

  • 1/2 head bok choy, thinly sliced
  • 1/4 cup peanuts, chopped

Directions

  1. Make the Dressing: In a small bowl, whisk together the grated ginger, minced garlic, rice vinegar, mustard, lemon juice, soy sauce, sesame oil, and red pepper flakes until well combined.
  2. Prepare the Salad: Wash the bok choy thoroughly and pat dry. Thinly slice the leaves and stems.
  3. Combine: In a large bowl, toss the sliced bok choy with the dressing until evenly coated.
  4. Garnish and Serve: Sprinkle the chopped peanuts on top for a crunchy finish. Serve immediately as a light and refreshing side dish.
