Inspired by the vibrant flavors of Chinese cuisine, this bok choy salad is a fresh and modern twist perfect for celebrating the spirit of renewal and health during Chinese New Year.

Ingredients
Dressing:
- 1 inch ginger root, peeled and grated .
- 2 cloves garlic, peeled and minced
- 2 tbsp rice vinegar
- 1 tbsp Chinese mustard (or Dijon mustard)
- 1 tbsp lemon juice
- 1 tsp soy sauce
- 1/4 cup sesame oil
- Pinch of red pepper flakes (optional)
Salad:
- 1/2 head bok choy, thinly sliced
- 1/4 cup peanuts, chopped
Directions
- Make the Dressing: In a small bowl, whisk together the grated ginger, minced garlic, rice vinegar, mustard, lemon juice, soy sauce, sesame oil, and red pepper flakes until well combined.
- Prepare the Salad: Wash the bok choy thoroughly and pat dry. Thinly slice the leaves and stems.
- Combine: In a large bowl, toss the sliced bok choy with the dressing until evenly coated.
- Garnish and Serve: Sprinkle the chopped peanuts on top for a crunchy finish. Serve immediately as a light and refreshing side dish.
